This modern cocktail, courtesy of the Mayflower Park Hotel in Seattle, Washington, is a delicious treat while catching up to old episodes of Downton Abbey. Proportions adapted by yours truly.
3ozGin (I used Hendricks)
2ozSt. Germain liqueur
Spiral of citrus rind
Fill a cocktail shaker with ice. Squeeze in the lime. Add the gin and St. Germain and shake. Pour into a large martini glass, leaving room at the top. Top the drink with champagne and serve with a spiral of citrus rind. Enjoy!
